Swedish Meatballs
Ingredients
- 1 TbspButter
- 1/2 LargeFinely grated onion
- 1/4 cupMilk
- 3 SlicesBread, crusts removed, cubed
- 1Egg
- 3/4 lbGround Beef
- 1/2 lbGround Pork
- 1 tspKosher Salt
- 1 tspBlack Pepper
- 1/2 tspGround Nutmeg
- 1/2 tspGround Cardamom
- 3 TbspButter
- 3 TbspFlour
- 2 cupsBeef Stock
- 1/4 cupWhole Milk Sour Cream
Directions
- Soak cubed bread in milk for 5-10 minutes. Shred.
- Saute grated onions in 1 Tbsp butter until softened. Cool onions.
- Stir onions into milk/bread mixture. Add spices. Add meat. Mix well.
- Form meatballs 1 1/4" to 1 1/2".
- Melt butter until foamy and brown meatballs in pan in batches until cooked through.
- Clean out pan.
- To make the sauce, heat 3 Tbsp butter in pan until bubbling, then slowly add 3 Tbsp flour, whisking the whole time.
- When roux has turned a light brown, slowly add in beef stock, whisking continuously.
- Add in sour cream. Taste for salt and/or pepper.
- Add in meatballs to heat through.
Notes
- Sauce can be made separate from the meatballs if desired.
