Fluffy Potato Bread

  1. Combine water and milk and warm a bit. Pour liquid into the mixer bowl.
  2. Add sugar and yeast to mixer bowl.
  3. Add salt and vegetable oil.
  4. Add cooled mashed potatoes and a couple cups of flour. Mix lightly.
  5. Continue adding flour and mixing until it comes together. Knead 5-7 minutes.
  6. Form a ball and place in oiled bowl. Cover with plastic.
  7. Let raise until doubled (1 hour or so).
  8. Prepare 2 loaf pans.
  9. Split dough and form loaves, place into pans.
  10. Let rise until dough fills pan and rises over the top of the pan.
  11. Bake at 350° for 35-40 minutes. Cover with foil earlier if browning too much.
  12. Brush with melted butter.
