Fluffy Potato Bread
Ingredients
- 2 cupsWater (Warm)
- 1/2 cupMilk
- 1 TbspSugar
- 1 TbspInstant yeast
- 3 tspSalt
- 1/4 cupVegetable Oil
- 1 cupMashed potatoes
- 7 cupsBread flour
Directions
- Combine water and milk and warm a bit. Pour liquid into the mixer bowl.
- Add sugar and yeast to mixer bowl.
- Add salt and vegetable oil.
- Add cooled mashed potatoes and a couple cups of flour. Mix lightly.
- Continue adding flour and mixing until it comes together. Knead 5-7 minutes.
- Form a ball and place in oiled bowl. Cover with plastic.
- Let raise until doubled (1 hour or so).
- Prepare 2 loaf pans.
- Split dough and form loaves, place into pans.
- Let rise until dough fills pan and rises over the top of the pan.
- Bake at 350° for 35-40 minutes. Cover with foil earlier if browning too much.
- Brush with melted butter.
Notes
- Makes 2 loaves or 24 rolls placed in 9x13 glass pans.
- Make mashed potatoes by wrapping two potatoes in damp paper towels and microwaving for 4-5 minutes until cooked and using the small holes on a grater.
